I've got loads of red lentils. What should I do with them?

There's a nice recipe for a lentil/apple loaf somewhere. It's a little bit complicated but tasty. You basically cook the lentils and fry some veg at the same time, then combine everything and stick it in the oven.

This sounds like it could be amazing. Will investigate further.

Reminds me of another weird loaf recipe that I love but is totally not vegan – pear and stilton.
