    It turns out that it wasn't a great idea; if you're switching from fixed to single free there's a pretty good chance you'll also want to change gear at least, and maybe tyres too. Having two pairs of wheels is a better plan.

    Or could you do something silly (more my style) and have a double 6-bolt hub, then have two rotors with the sprockets bolted outside the rotors (with spacers). Find/buy/manufacture a 6-bolt to freewheel adapter on one side. Flip the wheel to swap from fixed to free. Braking and drivetrain may be compromised and clearance and chainline would be an issue...
