  • Don’t know if this counts as foraging, but I scored a whole muntjac deer at the side of the road on the way home on Friday night. I didn’t see it that morning, so it must have been hit some time during the day. This is by far the biggest animal I’ve tackled and it was hard work with all the wrong tools in the dark on a makeshift bench in the garden. I got the haunch off the back and split it in two, took both loins off, one fore leg because the other was badly smashed and a nice thick neck steak for stewing with the bone in. I didn’t keep the trimmings because I didn’t actually know how fresh it was. Butchery skills definitely need some practice too.

    However, all perfectly fresh. BBQd loin on Saturday was delicious and about 1kg of absolutely stunning meat off one hind leg so far has made a really nice casserole and 3 steamed puddings.

  • Yeah... I waited until the kids next door went in but basically gutted it hanging up in the doorway of the greenhouse over a tarpaulin. Then butchered it on my favourite bit of spare kitchen worktop on a couple of Workmates in the garden. I’m quite overlooked. I have no idea what my neighbours think!
