    Well spotted, never found it! A couple of times I’ve substituted a smoked cured sausage from a Polski Schlep but usually just a decent pork banger. #heathen

  • Yeah - the polska kielbasa is the standard substitute even in the USA. I was hoping there was a UK source that you would let us know about.

    My hopes of andouille, shattered once again.
