I barely ever spin out on 50/11, and when I do, it's because I've just cycled up a big hill and am going down the other side at 60kph. So I'm usually glad to rest my legs. What's more this is the UK so there are cars, sharp turns, rain water, gravel and potholes everywhere, and on most roads I feel like I'm taking my life in my hands above 60kph. I would rather concentrate on braking and avoiding hazards than trying to pedal at 110RPM. And finally, in my experience the dude who's tucked up at 60kph is going faster than the dude who's still trying to pedal in a normal position.
Safe to say I personally don't give the slightest shit about top end. If I lived somewhere with 20km smooth tarmac descents and no cars maybe I'd change my tune.
Edit: just remembered I have some Deore triple cranks, might swap those on. They are absolutely hideous though:
