I thought the same about rum (as have a few friends questioning the keto diet and rum choice) but I've checked as many places as I can and looks legit that rum is either 0 or very low carb.
I guess whatever the process is of making it gets rid of all the actual sugar content.
Found this while looking it up, could be bullshit:
True: rum does not have carbs. Those are either fully fermented or removed during the first distillation. So why does rum (and bourbon, and some whiskeys etc) taste sweet? Due to aromatic hydrocarbons being formed / released from the barrel during the aging process.
It makes sense that most of it would be fermented into alcohol, I'd just assumed it was sweet as it wasn't all gone. I don't feel so bad about those Zombies I was drinking last night... :D
