Yeah coffee is actually a pretty mental rabbit hole once you get into it, same as all the other fields you mentioned. There's a huge variety of flavours to be found in different origins of bean, different brew methods, different ways of pulling an espresso shot. The current methodical approach is quite young so new shit is always being discovered and experimented with, like the effects of water mineral content on coffee flavour, the fact that you can pull stupidly long shots if you grind using an EK43, and using vaccum-packed pre-dosed shots straight from the freezer. I've been working as a barista for a few years as a side thing and it's a shame there's so little money in it because it's pretty interesting once you get into it.

Wonder if I'm alone in thinking that the difference between the best and worst cups of coffee I've ever had is tiny in comparison to say the best and worst beers I've drank, or the best and worst steaks I've eaten?

Thing is I should have, I've not had the monkey shit stuff but I've been to plenty of good coffee places but nothing's ever blown me away.

I have a related coffee thought which is why would you bother to develop the ability to taste different types of coffee? Seems like it just ruins 90% of available coffee, which you enjoyed previously. Unless you enjoy having another thing to moan about.
Wine is kind of the same - if you aren’t too careful you’ll start finding that everything below £15/ bottle seems undrinkable.

My main issue with coffee is the insane wastage produced by disposable cups, bought by the middle classes who talk like they are eco warriors but it’s actually nothing more than boring bragging round the dinner table.

I'd wager that the volume of cup wastage by the "bragging around the dinner table" types pales in comparison to the volume of cup wastage by every other person.
It doesn't make it OK but at least those doing not much more than paying lip service to eco friendliness are at least recycling their paper cups.
I don't really buy coffee from coffee shops so I'll sit and fester in my fog of smugness.
