Just to ask the obvious question, have you mocked up a seating position with the og seats removed?

Otherwise how do you know if any adjustments will ever allow you to see the dials?

I'd be tempted to see if you can go and take the seat out in their workshop and then measure up seating positions to see what position would allow full visibility of instruments (assuming there is one).

Otherwise Ramsaye's aftermarket HUD suggestion is a good one.
