They get hot pretty quickly, but just like a domestic hotplate, you can't alter the output instantly, and you're relying on good contact for conduction. For my moka money, it's about having that even, focused heat to produce the steam as quickly as possible and then being able to turn it down at the right moment and maintain the process. If you're going to buy something specific, I'd suggest getting a good camping burner, unless you can't have an open flame for some reason.
If that is the case, and since all the hot plates I posted are designed to maintain a steady temp, what is your recommended heat level?
I currently set my range to just over halfway, but that is using a 1250 watt coil.
