Fair fair. I do think 48/32 needs be far more common for everyday use.
With a 11-28 cassette, it make for a great road gearing with a closer ratio between each cog, and the only time you might miss the 50 or 52t chainring is when racing and/or going down alpine road.
With a 11-36 cassette, it turn the 32t chainring into an MTB gearing yet kept the 48t as a "1x11" road gearing (with similar jump to an old 8 speed cassette).
Specialized made the right move in choosing to fit an MTB derailleur hanger on their Sequoia to allow the 105 derailleur to work with a 11-36t cassette. Are you reading this James? maybe put a longer hanger on the 2019 Arkose??

Yup, hanger length on the 2016 Arkose wasn't bad either, I remember being stumped that the SS Di2 derailleur pushed 36t on the back without grinding. Mind you, this was with a 46t 1x setup.
Especially with the Shadow derailleurs, would be a doddle and wouldn't have to worry about destroying hangers constantly.

G-one speeds are magical. On tubeless, I've used them on really sharp coastal rocks (upped pressure a bit) and they flew. Minor cuts, but not a single pinch or fail. Anything a bit sandy and they do skitter a bit though.
What pressure you running?
I'd needs a new bike to use them again though. Only using the 26" monsteur these days.
