Sounds like a good plan! I'm super happy with mine, finally got round to getting some 38mm carbon rims for it before christmas, so will have new shoes soon. Also, definitely take it to RadBikes if you have any issues, Tom and Ben are great. I could see if I can find that noodle I used for the front brake and drop it in there for you - it helped a bit from memory but I have hydro now

To elaborate, rear cable disc is a PITA, but doable. I think @PhilDAS found Dura Ace outer to be the best as its compression-less but a lot more flexible than other compression less cables.
Edit: actually found my old post about Spyres and looks like 160 rear might be better actually as it gives a clearer curve to the brake cable
Neither frame exit point is ideally angled for cables and anything over 140 mm discs. But again, it will work with 160https://www.lfgss.com/comments/12924655/
