    Bought a tin of what we thought were lentils in brine. Nope, suspended in duck fat. Bleurgh!

  • Why 'suspended'? Literal translation from French or just a phrase I haven't heard before?

    There was some book, perhaps 'Vegetarian France' by Vegetarian Guides, which explained all the possible pitfalls in France. I think I read the edition that was current in 2002 before I spent a couple of days in Paris once. Then again, it may have been something else, my memory is hazy. I'll see if I can find it in the next few days, should still have it somewhere. Too late for you now, but may be a good tip for the future.

  • Suspended was my phrase, I thought of it as when I went to empty the can out the whole thing slid out in a big, translucent jiggly lump with the lentils distributed throughout the mass. Like the weird sodas with floating jelly sweets I remember as a yoot..
    Like this, but with gross fat.
