With fairly firm tofu, I just tend to make a slit in the packaging (which tends to be of plastic) and then press it inside the packaging so that the water runs out through the slit (and I don't lose any of the tofu). That messes up the tofu a bit, of course, so doesn't work if you want perfect cubes.
The tofu presses you can buy are good--but the one that was recently advertised everywhere was £20. I saw it demonstrated at a trade show recently but didn't buy one because of the price.
Just wondered how folks press their Tofu - - I've got some firm under kitchen towel and heavy books at the moment and I can see there are devices out there but maybe there are some homemade ideas ?
