  • Just wondered how folks press their Tofu - - I've got some firm under kitchen towel and heavy books at the moment and I can see there are devices out there but maybe there are some homemade ideas ?

  • slice it first and then just sandwich it in kitchen towel.

  • If you get the Cauldron stuff you will need a LOT of paper towel.

  • With fairly firm tofu, I just tend to make a slit in the packaging (which tends to be of plastic) and then press it inside the packaging so that the water runs out through the slit (and I don't lose any of the tofu). That messes up the tofu a bit, of course, so doesn't work if you want perfect cubes.

    The tofu presses you can buy are good--but the one that was recently advertised everywhere was £20. I saw it demonstrated at a trade show recently but didn't buy one because of the price.

  • I’m in rural France at the mo. Struggling somewhat!
    Bought a tin of what we thought were lentils in brine. Nope, suspended in duck fat. Bleurgh!

  • I used to spend a lot of time touring Europe with bands, always dreaded spending time in France for this reason! If the promoters didn't feed us we'd end up just eating bread, fruit and salad. Pretty weird considering how vegan friendly most of mainland Europe is.

    No, it's much worse than that. :)

  • If you ever come across Itis (vegan food stall), have the (to)fish burger. I thought I'd had all the burgers, but that one is something else. Both the messiest and tastiest burger I've had for some time (the 'fish' is the standard tofish you get in quite a few places, but what's around it is what makes it). I'd gladly keep eating these until a state of irrecoverable itis.

  • Why 'suspended'? Literal translation from French or just a phrase I haven't heard before?

    There was some book, perhaps 'Vegetarian France' by Vegetarian Guides, which explained all the possible pitfalls in France. I think I read the edition that was current in 2002 before I spent a couple of days in Paris once. Then again, it may have been something else, my memory is hazy. I'll see if I can find it in the next few days, should still have it somewhere. Too late for you now, but may be a good tip for the future.

  • Thats a Tofu Making Machine though isn't it ? How do you get it to press ?

  • Apparently if you put some weight on it it presses the tofu.

  • Suspended was my phrase, I thought of it as when I went to empty the can out the whole thing slid out in a big, translucent jiggly lump with the lentils distributed throughout the mass. Like the weird sodas with floating jelly sweets I remember as a yoot..
    Like this, but with gross fat.

    This is only to press it, there weren't any instructions with it, I presume you have to put a couple of tons on top to weigh it down

  • Ah, I see. I suppose that's so people can tip the entire contents into a soup or stew that they want beanier and (bleurgh) meatier. :)
