I've managed to get two cross bikes with just the front wheels off, stacked on their sides in the back of a Mk7 Golf. The seats don't fold flat mind.
I also test drove a Mk7 Golf Estate and it didn't seem offer much more room however.
My old Mk4 Estate could take all my bikes, except a 29er trail bike, with both wheels on.

Same in my dads Mk5 I used a few times, seats don't fold properly flat, I would put 2 bikes on their sides in it

Mk6 4 door hatch.
With the seats down pretty sure front wheel needs to come off to fit with the back of the front seats, width is fine. Sans front wheel you should get two in easy.
The most I've put in myself is one whole bike with another frame and wheelset (already broken down).

No, I don't think so. In my wife's I think the seat backs only fold down on to the seats (compared to my Focus, where the seats lift forwards then the backs come down).

EDIT - @christianSpaceman beat me too it and did a better explanation.
Even without the headrests.
My old mark 4 you used to flip the seat cushions up and forward and then the backrests would fold down in to that space. In the Mk7 the cushion part stays in place and the seats fold to the top and have an angle to them. At the bottom of the back part of the seats there is a lip to the boot floor. (Apologies for possibly confusing explanation)
