Pretty much any Avid or Shimano V-brake will do, but if you can find them without shelling out too much retrotax, Shimano's parallel-push V-brakes are awesome for giving you nice consistent braking without having to faff with adjusting the pad angle as it wears. Watch out for worn linkages though, can cause noise and vibration and the parts are too small and fiddly to do much about it.
Or get a Pompetamine and Shimano hydraulic disc brakes.

I have the same setup as CharlieCardboard. Basket between 420mm drops, using Tektro levers and a Wald 137 basket.
I am also running Tektro 926AL Mini V brakes over SKS Longboard P45 fenders. If you fit your fenders correctly and do not have enormous tyres the brakes do not foul the fender, and work just fine. See here (please ignore broken rear fender in that photo):
