I'll use the same bike as last time (two years ago), an ICAN carbon cyclocross frame. I will have Di2 but no disc brakes or dynamos!
Zipp Vuka Alumina aerobars are the ones to go for, much more solid than most others and plenty of adjustment.
Eurostar to Brussels works well for getting out there, but I'm not sure what their bike policy is nowadays, whether you have to pack it up, which would be a pain.
