What're the most gears I can fit with 126mm rear spacing? I'm building a bike for baby carrying around Bristol and need some gears. Would it be wise to have wide rims if I'm planning to have >33mm tyres?

7, but the axle is weak so you might want to consider an IGH.
Rim internal width at least 17mm for 33mm tyres, and 22-25 would be ideal.

I haven‘t really decided yet. I wanted a merckx for a while, this one came up at a reasonable price and I like the colour scheme. i would have preferred a stuttgart (since it‘s my home town) but the telekom team was the successor of the stuttgart team and I like pink paintjobs so it was enough to convince me. i initially thought about a modern groupset but I don‘t want to spend a lot of money so for now I think I‘ll just transfer the Dura Ace 7403 from the brh.
The brh has a dent in the top tube and a hairline fracture on the aeattube lug so i‘ll probably build it up as a beater. -

My friend did this and his shifting was awful until he changed the cabling. Nothing to lose if you try it though.

An older Shimano 6/7/8 speed Hyperglide hub will be 126mm and won't have the long weak axle problem that I think @mdcc_tester is referring to. 7 speeds will definitely fit. There's a chance you might squeeze all 8 gears into a 126mm space, but I've got a feeling the bottom gear might be too close to the stay. Bankrupt Bike Parts keep a stash of those hubs.

8-speed will be 130mm. Many of the 6/7-speed freehubs (and even some 8-speed, but you'd have to go looking for them) will be UG not HG which makes finding a cassette a PITA, although UG/HG hybrid 6/7-speed is pretty common and eliminates that issue. Nonetheless, widening the rear end by 2mm per side is much the best approach because there's plenty of choice of ratios and price points with modern 8/9/10/11-speed cassettes.

Old Shimano 7 speed hubs would be doable, usually even if they are 130 you can remove some spacers.
If seven speed cassettes are hard to get on your area then using 8-9-10 cassette while removing one cog would do. You'll have to use the corresponding shifters etc.

I was under the impression that those are 126 hubs that was used for 130 spacings often found on budget/dept. store bikes which still uses 7 speed groups, as iirc one type of hub was available both 126 and 130 spacing.
But cannot argue about the wheels strength point there especially this will be used for ocarrying a child :)

That's a possibility, in which case you are only going from the improved dish of a 130mm 7-speed to the standard dish of a 126mm 7-speed :)
