What, is any, are the benefits of moving to a single ring up-front?

If I wasn't getting the shifters/brakes so cheap, I probably wouldn't but it's the hydro brakes drawing me in.
That said I've been riding my CX bike on the road for 6 months with a 11-32 and I've never missed two up front.
p.p.s. Isn't the 1 gear trend a bit silly?
1 gear is nice chainline, efficient, cheap, smooth, quiet. 1x11 is none of those.
