Tricky. I sold my D700 because I never really got on with it. The body is pretty sturdy though. I haven't used the D600 but bought a DF which I really like. It is closest thing in digital to an FM2. They are pricey though.
The D700 is great.
Maybe look for both and see which clean low shutter-count examples emerge.
Yes, don't get me wrong it's a good camera. But I was using it as a D3 backup and it isn't, despite Nikon's claims to the contrary.
