Thanks mate, that's the sort of thing I've been worried about! Might try an 11sp wheel in it first of all and see what clearance is like!

Shouldn’t be an issue at all, my 1981 Batavus happily fitted an 11sp hub. Each stay only has to move 2mm

True enough, I reckon 7800/7900 should be near enough the balance point for me in terms of cost to be worth the spend so going to keep my eyes peeled!
