@mashton - your transition can't look like this photo. Because you have old skool bars.
On bars, the reason bars are like they are now is because they are more comfortable. One of the downsides is its really hard to get modern compact drops into old skool stems, but you have bought a stem that makes this easy!
Get some modern compact drops in 26.0. Deda piega are cheap, but only in black. Previous posters have pointed out you can polish/strip the key section with moderate ease.
Alternatively Soma highway 1.
Do it. It's the joint most important part for comfort along with saddle and will make a big difference.

The compact drops on (my) Ron Cooper are the Nitto M106 in the Planet X link, although I see PX only have the 26.0 clamp size available in black. So much more comfortable than the old Cinelli bars on there previously - both on the hoods and in the drops - but I know that's a personal thing.
