Thinking about buying a bottle capper now and pretending I'm some kind of counterfeiter in the Fallout universe.

Consider me very interested.
Might do a few test runs with different spirits. Was thinking a gin and juniper ham would be tasty.
And maybe a really peaty/smokey scotch...
Ooohh!!

anyone got any recipes/tips for cooking a ham, which isn't on the sweet side?
Got to do one for the family and my mum has type 2 diabetes, so the cook it in coke, use shit loads of honey and brown sugar approach isn't really going to work for her. -

Can you use sugar-free maple syrup and whole grain/ English mustard for the glaze?
You could use coke zero..
It's a lot of artificial sweeteners though. I suppose the sugars are there to help the malliard reaction.

Tom Kerridge did one with membrillo which is slightly sweet but much less so than coke ham etc.

Doesn’t work with artificial sweeteners

Any recommendations for a meat thermometer? Wired/wireless/instant?
Too many choices. Just don’t want to fuck up cooking a really nice piece of beef on Christmas Day.

My oven has been repaired after 2 months out of action, looking forward to doing a roast again.
Also want to make red beans and rice, with the two smoked ham hocks I've got sitting in my freezer.. -

I have the heston Blumenthal one for (Salter?) with two probes, which I think is really useful.
But his range of stuff is always pretty good
-

I would usually agree, but that product has pretty variable reviews.
There’s a wireless one here that’s cheaper and has a lifetime guarantee on the probes (which apparently they are good at honouring). https://www.amazon.co.uk/ThermoPro-TP-08-Digital-Wireless-Thermometer/dp/B014DAVHSQ

Anybody know where I can buy whole farmed carp, ideally of 2-3kg live weight?
-
• #26495
I would have thought any Polish supermarket could get one in for you.
-
• #26496
That looks like a more robust version and gets great reviews.
-
• #26497
Aye, will scout a few. I heard they mostly deal in frozen tho.

There are some massive fish that look like carp in the banglatown supermarket at the bottom of hanway st. My Hindi isn't great though, but they had some with carp like scales.

Cheers for the tip. Now you mention it, I remember seeing some in Brixton market too. Am also investigating fisheries suppliers...
