I really like the looks of the Athena chainset.
I could get a Potenza Groupo for about £650, sell the chainset and buy an Athena (maybe in a triple) for under a ton. Profit.
I'm sure the Athena chainset would be able to handle my moderate power output.
Any reason why the Potenza mech wouldn't play nice with the Athena triple?

no but you'd want at least a medium cage if you're going for the triple, probably long.

Triple mechs (front) have a deeper cage to handle the greater difference in tooth count.
Are you planning to tour with panniers and a trailer up a mountain?

I just hate running out of gears! I don't have the opportunity to ride often enough to become quick up hill.
Going for the Potenza medium RD with the 32 cassette should sort me out though. With a compact Athena chainset for the sweet neo retro looks.

Campagnolo makes an 11-29 cassette, works with short cage derailleurs.

Have ridden potenza and it is very very good! The polished silver will be classy. The new 11s Centaur seems like a great (cheaper) option too? I would guess that it’s the same kind of quality as 105

I drove down to Littlehampton today and picked up that Daccordi frame and fork.
It was a beautiful day to be by the seaside and a beautiful day for a drive in a car with no lid. A tad cold but....
First look at the frame and it is in fantastic condition. Some paint rubs and marks, but much less than one would expect, given its age. Shiny chrome mmmm.

Also, regarding this, Potenza cranks are also 4 arm now and IMO look even worse. The matte black paint on them looks really cheap (I guess polished silver might be okay?). If the cranks are your issue, I would still say go for Shimano, but get some aftermarket cranks instead
