I use a vango banshee 2 person, it's a spacious 1 person tent ;) fits all your panniers, etc inside. It's actually really easy to pitch after the first time pitching it. the only problem is that is not a freestanding pitch, so you need grass,etc to pitch.
weight: 2.3kg.
quite waterproof too!
