So, what are the 3x7 shifter options to work with shimano 200gs mtb stuff?
Ideally Iād like to run road levers and shifters. Will the tourney drop levers that pop up on Ebay work(listed as road pull)? Microshift? Give up and get thumbies or bar end levers? Would like to keep it looking tidy ideally and I crash stuff whenever I venture off road which makes me worry about bar end... -

Rear MTB and Road pulls were the same, except for one of the earlier Dura Ace sets. Tourney should do fine, however neither that, nor the 200GS are good quality stuff, so don't expect 100% fine shifting. You'll need a road front derailleur though, those aren't compatible. Microshift is a better choice than Tourney I think.
Alternatively I'd go with post-2001 3x9 Campagnolo Ergopowers, as their cable pull is almost perfectly the same, but they work way better and are easier to maintain and repair.
I'd really switch that 200GS RD to an LX/DX/XT from the same era, they tend to be cheap and work a hundred times better.

Normally Iād switch stuff like mechs but the bike in question is bone stock and prob done less than 200miles in its near 30years so would be madness to do.
Will go microshift and see what I can manage... -

Okay Okay, i realized what a shame it would be replacing those two classics with an ordinary alu piece.
So i made up my mind, decided not to sell them, and maybe i will buy a Pinnacle arkose one day.
