The Y-piece leaked so I swapped it out for a new one and used some white PTFE tape on the big join with mains metal pipe.
Now it's leaking on the smaller plastic-to-plastic join to the coffee machine which has no PTFE tape but was tightened hand-tight then another maybe 1/4 with a wrench (was trying to be careful not to crack anything). The other end is hand-tight, no PTFE, no leak.
Should I just get a plumber to make an all metal splitter? Should I use blue PTFE tape on all the joins? Some people are talking about using potable, PVC-friendly pipe dope. FFS, surely there's some basic fucking science involved there that I can apply this this pipes instead of internet fucking voodoo.
In other news the Maeco dehumidifier I bought works well.
