What flavour? You can cut them down now if they're ramblers, take out the old stems and cut the rest down two thirds, handful of bonemeal and mulch.

one's a trad looking english one and the other is a hybrid tea - both looking leggy

Only if flowering has finished.
Trim down by about a third now then in January take right down to just a few twigs poking out the soil trimming to just above a couple of good buds.
