There's more shifter than handlebar. Not sure the bars are even necessary anymore, why not just mount the shifters directly to the stem?
(Remember you read it here first when Shimano start doing this in a year or two.)

They're SKS Raceblade Longs with 25c 4 Seasons. They're OK I guess.
I originally had the arguably better PDW Full Metal Fenders with Open Pave tyres in 24c, but they couldn't accomodate anything bigger unfortunately. -

Just get a narrow wide chainring. I’ve ran two set ups without chain drops with NW ring.

It's fine, I really like the barend shifter. It has an MTB chainset with a shonky chainline, so the biggest cog is restricted using mech limit screws (so really 1x8), as it dropped the chain from that position a couple of times even with a n/w chainring. Get a road chainset & you will be fine.

Finding the current setup of my Day One a bit sluggish.
The pizza rack and wald basket mean I don't need a rucksack on the commute and are ace for picking up some shopping on the way home from work and also worked really well for the one camping trip I managed this summer but it's gonna be 3 or 4 months (at least) till I'm likely to be doing that again, I figure I don't really need to be carrying all that bulk around with me.
I keep seeing pics of Day Ones and CDFs looking pretty svelte and I'd like to get mine heading in that direction at least.
Mudguards need to stay and the other issue is the dynamo lighting/wiring. Currently the wiring is routed along parts of the pizza rack and the light hangs off the front of the rack too. I can reroute the wiring up the fork leg and mount the light at the fork crown but this means it's not a 5 minute job to swap the rack on and off.
I have a Blackburn Outpost front rack which could go on in place of the pizza rack/wald but it's not going to have the everyday practicality of the current setup so is probably a bit pointless. A handlebar bag might be better, I have a cheap Oxford one that I'll probably chuck back on.
I wonder if I should try a different bar and stem too. Longer stem, narrower bars might make it feel a bit racier?

Turn it into an equilibrium for a bit maybe? 25/28c tyres, guards and drop bars with longer stem.

Yeah, drops would probably help but there is no decent drop bar shifter for the Nexus/Alfine hub.
The bikes are pretty much unusable with the bar end shifter they come with and I've tried the Versa sti unit previously and they are awful too.
It's all gone downhill.
