I'm 1.80, with a 79cm saddle height and broadly speaking I am very happy with my medium Ultimate with slammed stem. I agree that they feel big, especially coming from a very compact frame with very long stem. Even slammed it's not a massive drop at all.
I have some experience working with Canyon rentals and my rule of thumb was 75cm as a cut-off point between S and M.
Although it's very much an Internet Bike Fit I do have a feeling a Small should at least be tried on / considered. That one piece stem / handlebar is not really doing it for me (too short / too wide) though.
