Everything seems fine.
I'm getting an error message that is from the web server (not Cloudflare, and not the API either), but only post-upload.
It is as if it uploaded fine, but took such a time that a timeout occurred.
But that isn't what is happening, because I've uploaded larger files on the same connection just fine.
For a while I suspected that the WAF (firewall) was detecting weird things in the file, but that's not the case either (WAF logs would tell me).
I need to check whether it is actually appearing within AWS S3 or not... i.e. did it finish getting processed and uploaded and the linking it to the post is the bit that is broken. That will at least guide me to one of the two possible places where the issue could be.
