Are the shapes of the spokes in these images the stress the wheels are enduring at such speed or is it just an optical illusion?

It's an illusion - the camera spins around on the same point or something

optical illusion, to do with the camera recording speed. Like this

It's similar to the rolling shutter effects you can see. Have a look at this
video and bear in mind that a finish-line camera is a single strip of pixels taken as a sequence in time.
