It's just going to put pressure on a focused point. Two or more will spread the clamping load and be more secure. Sure @mdcc_tester can give you a more scientific answer.

A tolerable idea, but in all ways inferior to two bolts, which is why the vast majority of steerer clamps have two bolts.

We don't really need science, we just need a broom handle. Hold one out in front of yourself with one hand and ask a friend to try to tilt it. Now grab it with your second hand at some reasonable distance from your first hand and make his job ten times harder :)

Yeah, but a broomhandle is long, a stem clamping bit isn't, so the difference isn't all that.
I therefore move that if a stem is a bit hip hop but only has 1 bolt it's ok to use, because hip hop defeats science erytym.
