Maybe the old engraved bars were also designed and dimensioned with engraving in mind.
Or maybe they just broke more often than either users or, in this litigious age, manufacturers, are now prepared to tolerate.

Most "engraved" bars you'll come across, the designs are on the clamp sleeving.

An actual sleeve is probably the minority (depending on what cut-off date you choose), more just have the roll stamping on the butted centre section.

All the stress riser and structural integrity talk is informative, I learned a lot that I never considered before. Buttt tons of those roll stamped bars are still on the road after all these years, along with plenty of bars that got deeper scratches than I etched just from bodging them into stem clamps or falling over in day to day use.

True. But dentistry can be expensive if things go wrong - plenty of other real estate on your bike to doodle on which might not have such catastrophic results if they failed?

Just finished installing first geared build (1x), went to try shifting and...nothing! Figure it might be that there's not enough tension in the cabling, but maybe the rear mech needs to be adjusted? Suggestions for trouble shooting?

Comments invited from non-colourblind folk. Do I use this Deda Intense Ochre tape, which looks to me like a better match for the saddle, or get some fresh SRAM yellow like I already have which obviously matches the hoods better?

Use the ochre tape you already have and get a pair of black hoods from the money you save by not buying new tape :)

I am putting together an Affinity Lo Pro and I am pretty sure it'll be too big for me...
Should be done tomorrow so time will tell!

Agree with Heldring - Deda tape and black hoods probably the best bet if matchy-matchy is important. Otherwise it'll look off regardless.
