I'm going with my other half, the pace will be pretty steady, we plan on spending days exploring cities / towns by bike after setting up at a camp site. I would worry more about leaving the CDF locked up around town and it's much easier to ride the GT at a slower pace, plus it's really nice to ride even loaded. I've done some big trips on the CDF in the past, don't worry.
Not worried at all, I'm sure you'll have a blast regardless of which bike you take. I feel you on the whole lock up thing, wanting to enjoy new places and having to constantly worry about your bike getting stolen certainly doesn't mix well.
