Chainline efficiency is the reason for single ring - 58t vs 53t means you get basically the same gear with a sprocket 1t bigger with slightly less (single w) lost to the chain.
eTap FD is also bulky as fuck.
Reason he's got a reasonable cassette spread is cos UCI do daft things like have TT courses that aren't completely pan flat.
