I've been talking to a neighbour about solving this problem. It's time consuming but you could replace the wood behind the sink with stone, could look alright if it's done properly. It needs some skills tools and careful measurement though, in the end the labour costs would be around the price of a new piece of worktop (maybe not fitted).
