It's a ride with GPS route I've loaded. Is there a limit to the zoom level on the ride with GPS website?
I've seen videos and pictures of the navigation online and they're zoomed in way closer than 2000ft :(

I don't know how Wahoo manages map tiles, but to me that sounds like you've map tiles loaded to a certain zoom level, but when you zoom in the necessary higher zoom level tiles aren't available.
