My tourer has a mtb triple. Dorky as fuck but no regrets at all. It never fails to find the gear I want.
My off-road tourer/prolly whip will be 1x11 tho.
Don't think I'd go 1x on a long distance bike just in case. You can always just not use the other chainring but you'll be bummed out if it's not there when you need it.
Obvs there'll now be tons of other conflicting advice inc from those on here who tour fixed.
