been busy with loads of other shit so haven't got round to sorting this out. now only need a seat binder bolt (how do I know what size to get?). some cables and either an FD + shifter/or get a £20 narrowwide from china. unsure which I would rather. I am also gonna get a front rack for lols

Ask your LBS nicely, and oftentimes they'll sort you out, if you only need one bolt.

Never been into gears but is it possible to build with a single chain ring thus doing away with all the front jiggery pokery giving a cleaner line need to build something that's easier on my knees

Yeah of course you can. I tend to try and pick my rear block gearing so that the common gears I use are with a straight-ish chainline. Some mtb front rings have a taller teeth with a wide-narrow tooth layout especially for this setup, so that the chain is less likely to jump off.
I'm late to da party but that is absolutely smashing. Story of a bike, love it.
