  • But then what do you put on your bread??

  • I steer well clear of palm oil... it's the scurge of the earth!

  • Not much. If I'm eating just yeast extract, a tiny scrape of coconut oil, otherwise, if I'm eating peanut butter or hummus, no extra spread is needed. Don't eat a huge amount of bread these days anyway.

  • I steered clear of bread for a while... but lately it's dragged me back

  • Yeah, it's just so easy for a quick bite. I do still eat it, but significantly less than I used to when I still ate cheese! I've made my own bread for years, and recently have started only using spelt/rye flour, and avoid white/wholewheat generic flours. Seems to digest better.

  • That's exactly what I'm after, nice one.

  • Teriyaki tempeh with black rice n stuff. Nom.

  • I went to My Neighbours, the Dumplings in Lower Clapton Road last night. Some very decent vegan options, amazing vinegar, and a very lovely taste experience. Several vegan staff are apparently working on the owner to go fully vegan (they currently serve meat). Fingers crossed they prevail. They also have a little bar in the basement and are expanding the venue to the back to create a lovely little warren of hospitable rooms. A great venue local to me where I'll be going more often.

  • Hey, I was there a couple of weeks ago! They had a mushroom bao as one of the specials - that was very good.

  • I also steer clear because of the palm oil, and make my own butter. It's surprisingly easy - there are plenty of recipes online. I don't have mine to hand, but it uses coconut oil, olive oil, soy milk, a pinch of salt and some liquid lecithin. You basically whip everything together for a few minutes and then leave to set. Voila! Delicious, fluffy butter. Melts on toast and makes great buttercream icing.

  • does anyone have any good savoury oatmeal recipes? I'm heading a bit too far down the sweet path and would be good to change it up a bit. There seem to be a few recipes online but they end up being cooked meals by the end of it and tbh, ain't nobody got time for that.

  • Sounds interesting. Do you always use the same recipe?

  • I've used solid lecithin instead of liquid a few times, but that's about the extent to which I've played around. It's not a healthy foodstuff, but I cannot resist the lure of toast + butter + nutritional yeast - so my dependency must continue.

  • My gf's the same. Shall have a look for recipes, let me know if you find yours

  • First pancake attempt, not bad but more like crumpet texture.

  • You are a credit to this thread

  • Hardly.
Besides, I have 31.5yrs of eating crap to make up for.

Got a bag of vital wheat gluten this morning so this weekend will be spent learning to make seitan..

  • I think you need to use the regular (not mobile version) of the link and it will embed properly.

  • Thanks!

  • @edmundro I agree with @Thrasher
Keep up the good work. Your posts on here have been the inspired for a few meals in our house lately.

  • Non-stick, or heavy well used frying pan + minimal oil + very hot = crepe style, sliding round the pan, pancakes.
    Currently using barley flour.

  • Seitan nuggets are bubbling away, will steam the kiev pockets over the top.
    Seitan dough is weird.

  • Kievs were rad. Most of the filling sweated out during steaming in foil but added it to the egg replacer for breadcrumbing prior to baking.
No pics but tasted pretty good. Texture is somewhere between bread and meat which was kinda novel.
Our mix was enough for 2 big kievs and 2 dozen nuggets which are in the freezer ready to use for whatever.

Making burger buns at the mo, I suck at bread tho.
