I also steer clear because of the palm oil, and make my own butter. It's surprisingly easy - there are plenty of recipes online. I don't have mine to hand, but it uses coconut oil, olive oil, soy milk, a pinch of salt and some liquid lecithin. You basically whip everything together for a few minutes and then leave to set. Voila! Delicious, fluffy butter. Melts on toast and makes great buttercream icing.
I've used solid lecithin instead of liquid a few times, but that's about the extent to which I've played around. It's not a healthy foodstuff, but I cannot resist the lure of toast + butter + nutritional yeast - so my dependency must continue.
