But I've read very mixed reviews when it comes to hammocks so I may just get a tent and deal with it!
It's because you squash the insulation below you in a hammock so your back is almost just against just open air.
Not only is the insulation squished (and moved around) but I think the bigger factor is the wind chill (even if there is virtually no breeze) that efficiently moves fresh air past your bottom the whole time. Side sleepers need not apply either.
