I was in Skipton a couple of weeks ago, the woods behind the castle are absolutely covered in wild garlic. Smelt so good walking through.

In Tuscany for the week. Amazing porchetta at the market in Casole D Elsa today.

Think it was originally a whole pig done as porchetta... Trotters and tail were still present round the back.

Yeah and more expensive as the pound tanks.

One big supermarket bag makes two 1L jars of fermented wild garlic!

There is enough left over to make some pesto however! I'll have to get some more later this week.

Pigs trotters and tripe stew planned this weekend, epic hangover cure apparently needs 8 hours slow cooking, mixed with guineo (that small green plaintain from colombia, actually from west Africa) I picked up at Brixton market yesterday.

First though need to get proper wrecked on booze to test its recovery credentials.
