Brittany To Gibraltar - Things to see?

It's all a bit last minute as I depart on Saturday on the ferry from Cork but...

I've got three weeks to cycle to Gibraltar and was wondering if anyone had any must see sights they'd recommend along the way.

I've gotten some inspiration from @edscoble 's half-finished Pyrenean oddessy and the awesome video @madman made of his trip to Bilbao.

The plan is to traverse France in a week, doing some of Eurovelo 1, then spend five days in the Pryennes, then spend the last week traversing Spain taking in some of the greenways (http://www.viasverdes.com/mapas_en.asp) along the route.

Any shoutouts for beautiful spots, climbs etc along the way would be greatly appreciated!
