tried this the other day. specific instructions on the back for making mousse. completely shit. didn't rise much, tasted grainy and wierd. waste of three nice bars of chocolate.

Have you tried 'aquafaba' (I think it's called). It's on my to try list but supposedly it's a viable egg substitute.

I like the idea of it because it's a non refined / processed ingredient.
