Automatic centre punch.
Punch an axial dent near the circumference of the bolt.
Punch it several more times to make the dent nice and deep.
Place the punch in the dent and tilt it so that it is punching as radially as is possible.
Punch, punch and punch again in an anticlockwise direction until you've rotated the bolt out of the riv nut.
This works. Just takes a bit of patience - and there is no risk of snapping an extractor.
Cheers, have tried but really is too deep for this method to work, but you're right, I've had success in the past doing this. Also I suspect bolt may be cross threaded because it isn't shifting!
