Ideally I'd have two wheelsets a fat one and then a nice wide 29er one also for riding that doesn't really require a fat bike.
Are you in the UK?
We don't really have conditions that require fat bikes so I'd expect you'll either like the slower bouncier ride from the fat wheels and the 29er wheels will sit unused or vice versa.
So I've just picked up a ritchey commando - 26 x 3.8 / 135mm front & 170mm rear hub.
