I want to drill a 20mm hole in some thinnish ply (12 or 18mm from memory).
What would be the best type of hole saw?
I also think I might want to drill a similar hole in some metal later, so was considering this bi-metal hole saw
I have a normal decent hand drill.

A hole saw should be fine. It'll help if you can rest the ply against a sacrificial bit of wood/MDF/whatever to support it while you drill the hole.
