I'm really not too fussed about discs - had them on the CAAD10 and wasn't convinced by their feel, much prefer being able to dial in rim brakes to suit your desired modulation!
I'll have a look at the Dolan - @Pete4Eyes just mentioned it to me aswell actually - I was looking at the pinnacle Arkose aswell
I think a CX frame with Cantis would be my best bet
(Please don't mistake this to be in a similar vein to @amey's current tomfoolery 😂)

I have a dolan multi x (I know, 10% of your usual budget) but it ticks all the boxes and is kinda racey geometry. cantis/mini vs though but I havent caught up with the disc brake fad yet..
